A Short History of Food - Part II

The discovery of the Americas by Europeans was a watershed in the history of food. It brought major changes to the diet of millions of people as various types of food stuffs were transported from continent to continent.  In this class we will look at the new foods of the Early Modern World, and how they migrated and were transformed as well as new methods of preservation and transportation. In addition, we will look at the way climate encouraged the development of regional cuisines and conclude with a discussion of the growing importance of food and food preparation as entertainment and the rise of the celebrity chef.
