This innovative and lively training will get you started on a rewarding career in the culinary industry. Whether you dream of putting on large catering events or crafting unique gourmet dinners in a fine dining establishment, we can give you the background you need to make it happen.

The Culinary Apprenticeship Certificate is a 6-month intense program designed for aspiring culinary professionals with a passion for food who desire something more than the traditional, classroom-based culinary education program. You will work hands-on in the kitchens of accomplished professional chefs who will provide the tools needed to succeed in the hospitality industry.

What You’ll Learn

Sanitation basics while preparing for the ServSafe® exam
Industry tools, equipment and food science
Knife skills
Dry and moist heat cooking methods
How to make stocks, soups and sauces
Meat, poultry, fruits, vegetables and herb identification
Garde manger (keeper of the food) duties
Baking, plating and presentation including differences in world cuisine

Prerequisites
Working knowledge of computers and access to a laptop or desktop computer and the Internet are required.

Students are also required to pass a background check, sign a waiver of liability and show proof of health insurance.

Location
Classes will be held at KSU Center, primarily in our professional catering kitchen classroom.

Apprenticeship Sites
Your apprenticeships will consist of approximately 12-15 hours per week in rotation between several prestigious venues.*

By completing 240 hours of apprenticeship work divided into four different rotations, you will gain hands-on experience in a variety of food service environments. Working 60 hours at each location, you will make important connections in the restaurant industry and gain valuable experience for your resume.
